Bonnaire is a grower producer based in Cramant, one of the six Grand Cru villages of the Côte des Blancs, farming 22 hectares of vineyards across Cramant, Chouilly, Oiry, Cuis and Bergères-les-Vertus. Founded in 1932 and now led by the fourth generation, Jean-Etienne and Jean-Emmanuel Bonnaire, the house specialises in Chardonnay-driven Champagnes that reflect the opulent, creamy character of Cramant — richer and rounder than Le Mesnil, with an intense chalky minerality. The Variance cuvée, aged in oak for a minimum of five years, is the house's most complex expression and one of the great unknown prestige cuvées of the appellation.
