Champagne Bourgeois-Diaz is a biodynamic grower estate in Crouttes-sur-Marne, in the far west of the Marne Valley, run by Jérôme and Charlotte Bourgeois. Jérôme tends 7 hectares of Pinot Noir, Pinot Meunier, Chardonnay and Pinot Blanc across roughly 30 parcels on clay-limestone soil, farmed without pesticides since 2009 and certified organic and biodynamic since 2014. In the cellar the approach is low-intervention: spontaneous fermentation with native yeasts and minimal-to-no sulfur, with wines unfined and unfiltered.
