Champagne Dauby's story begins with the meeting of two winegrowing families, Thérèse Tissier and Guy Dauby. Starting from a few parcels inherited from their parents, they built a vineyard among the finest slopes of Aÿ and Mutigny; in 1956 they acquired small oak Champenois vessels and released their first cuvée under their own name, founding Champagne Dauby. The estate is now run by mother and daughter, continuing the same philosophy of respect for the land. The 8-hectare vineyard is planted 60% Pinot Noir with the remainder Chardonnay, spread across 5 villages: Aÿ (100% Grand Cru), and the Premier Cru villages of Mutigny, Mareuil-sur-Aÿ, and Avenay, plus a parcel in Barbonne-Fayel south of the Côte des Blancs. The estate owns all of its own grapes and controls every step from planting to harvest, is pursuing Haute Valeur Environnementale certification (partly organic), and presses each cru/parcel/grape variety separately before blending.
