Dom Pérignon is the prestige cuvée of Moët & Chandon, named after the Benedictine monk Dom Pierre Pérignon who served as cellarmaster at the Abbey of Hautvillers from 1668 to 1715. Produced only in exceptional vintages from a near equal blend of Pinot Noir and Chardonnay, each release is aged for a minimum of eight years before release — its "first plenitude." The wine is also released in a second plenitude (P2) after fifteen or more years, and a third (P3) after twenty-five years, offering collectors a rare window into extraordinary maturity.
