Doyard is a family estate in Vertus with winemaking roots traceable to 1677, making it one of the oldest documented domaines in Champagne. Today led by Guillaume Doyard, the 10-hectare estate farms without herbicides or pesticides — most parcels are worked by horse — across Vertus, Le Mesnil-sur-Oger, Cramant, Oger, Avize and Aÿ. Every parcel is vinified separately, 40% in old oak barrels, 60% in stainless steel. All wines age a minimum of 48 months on the lees. The resulting Champagnes — led by the flagship Vendémiaire — are among the most vinous and mineral-driven expressions of Vertus in the appellation.
