About
Guiborat is a grower producer based in Cramant, with a domaine history dating to 1885. Today led by Richard Fouquet, the fifth generation, who took over at age 21 in 1996 and gradually converted the estate's best parcels to organic farming. Of the 8 hectares farmed, 5 are still sold to Laurent-Perrier; Guiborat's own wines come from just 3 hectares of Grand Cru Chardonnay in Cramant, Chouilly and Oiry, plus a parcel of old-vine Pinot Meunier in Mardeuil. All wines are vinified in stainless steel with no oak, minimal dosage of 1.5g/L, and no malolactic fermentation. The resulting Champagnes — particularly the Prisme and Caurés — are electric, crystalline expressions of Côte des Blancs chalk.
