Jacques Selosse is the most influential grower producer in Champagne — a domaine that single-handedly redefined what grower Champagne could be. Founded in Avize in 1949, the estate was transformed by Anselme Selosse, who took over in 1980 after training in Burgundy and introduced barrel fermentation, oxidative ageing, minimal dosage, and an obsession with terroir that was entirely foreign to Champagne at the time. Today led by Anselme's son Guillaume, the domaine farms 8 hectares across Avize, Cramant, Oger, Le Mesnil-sur-Oger, Aÿ, Mareuil-sur-Aÿ and Ambonnay. Production never exceeds 55,000 bottles per year, making Selosse among the most coveted and scarce Champagnes in the world. The solera-based Substance — initiated in 1986 — is one of the most extraordinary wines produced anywhere in France.
