A small, artisan estate in Cramant, working exclusively with Grand Cru Chardonnay from the village's prized chalk slopes. Mallol produces a tight range of Blanc de Blancs that reflect Cramant's distinctive personality — broader and more generously textured than the austere precision of Le Mesnil, with a characteristic note of white flowers and ripe stone fruit underpinned by the deep chalk minerality common to all Côte des Blancs Grand Crus.

Cramant Blanc de Blancs and a whole baked Camembert with honey and walnuts is an indulgent but perfectly balanced pairing — the wine's acidity cuts through the richness of the cheese, while Cramant's characteristic white flower note echoes the honey beautifully.
Working exclusively with Cramant Grand Cru Chardonnay gives us a single-terroir perspective that larger houses rarely have. Each year's harvest reveals a different face of the same chalk — 2023 was leaner and more mineral than the rich 2018, but both are unmistakably Cramant.
