Pascal Doquet is one of Champagne's most committed organic growers, farming 5.2 hectares in Vertus, Bergères-les-Vertus, Mont Aimé and Le Mesnil-sur-Oger. He began converting to organic viticulture in 2001 and achieved certification in 2010 — among the earliest in the Côte des Blancs. Pascal uses indigenous yeasts, separates each terroir for vinification, and maintains a perpetual reserve begun in 2012 for his Arpège cuvée. His Coeur de Terroir series expresses specific Vertus parcels with surgical precision. The resulting wines are among the most honest and terroir-transparent in the entire appellation.
