Champagne Simart-Moreau was founded by Pascal Simart, who began storing his first 4,000 bottles from his first harvest in 1974. His 1976 marriage to a Mademoiselle Moreau led to the creation of the 'Simart-Moreau' brand, with sales beginning in earnest in 1977. Both families trace their roots to Chouilly, where they were third-generation winegrowers at the time; the estate is now moving into its fourth generation and produces around 30,000 bottles a year. It operates as a Récoltant-Manipulant (RM), selling only wine from its own harvest. The estate expanded by purchasing vines in Aÿ (Grand Cru) to broaden its range, and since late 1999 has offered both a Grand Cru blended champagne and a Grand Cru single-varietal Chardonnay from Chouilly. Day-to-day operations are run by Jean-Philippe, while Pascal Simart oversees the winemaking and blending; Madame Simart, now largely occupied in teaching, still advises on blends and final tastings.
